Sweet Christmas Decorations

Christmas is almost here, so it’s time for us, ladies, to begin the preparations! Need some new ideas for this year? Well, we have some special recipes for you here. These cookies can be a yummilicious Christmas dessert, or fabulous tree decorating items. Or both.

Ginger and Cinnamon Biscuits

200g brown sugar

85g golden syrup

100g butter

1 tsp bicarbonate of soda

1 egg

3 tsp ground ginger

1 tsp ground cinnamon

350g plain flour

plus extra for dusting

100g white chocolate

edible silver or colored balls

In a bowl, heat the sugar, golden syrup and butter until melted. In another bowl mix the cinnamon, the ginger and the flour. Add the bicarbonate (dissolved in 1 tsp cold water) the melted sugar mix and the beaten egg. Mix well, then cover the bowl with clingfilm and leave to cool, then put it in the fridge for at least 1 hour.

Heat oven to 190C/170C fan/gas 5. Turn the dough out onto a lightly floured surface and knead briefly. Cut the dough in half and roll out one half on a lightly floured surface. Cut into shapes with special cookie cutters (gifts, trees, hearts, angels and so on) then transfer to baking sheets, leaving a little room for them to spread. Make a small hole on top of each biscuit to be able to hang them on the Christmas tree. Repeat with the remaining dough then bake the biscuits for 15 mins until they darken slightly.
Melt the chocolate in the microwave on Medium for 1-2 mins. Drizzle the chocolate over the biscuits, then stick a few silver or colored balls into the chocolate.

For the dough:

1 cup butter

3/4 cup sugar

2 teaspoons vanilla extract

2 eggs, 2 1/2 cups flour

1/2 teaspoon salt
For the cream:

1 cup butter

3 3/4 cups sugar

2 teaspoons vanilla extract

1/3 cup milk

Preheat oven to 350 degrees F.
Using the mixer beat butter and sugar, then add vanilla and mix until well combined. Beat in the eggs, one at a time and gradually add flour and salt beating just until incorporated. Roll the dough out between parchment paper, cover and place in the refrigerator for at least 1 hour.
With a Christmas tree shaped cookie cutter, cut out cookie shapes and place onto a prepared baking sheet. Bake for about 12 minutes.
Using the mixer beat butter for about 3 minutes, gradually add powdered sugar, beating just until incorporated. Add vanilla and milk and beat until frosting is light and fully. Add the cream on the biscuits.
