As I already told you, in one of my older articles, a vegan’s life doesn’t have to be an insipid and tasteless one. Not at all! With a little bit of imagination and cooking talent, you can prepare delicious meals without meat, eggs or dairy. And yes, dear, you can also cook yummy desserts out of vegan ingredients.
If you want to become a vegan, if you are preparing for the Christmas fasting or if you simply want to try some healthy, but really yummy vegan desserts, here are some great recipes for you:
1. Fruit Salad in Orange Bowl
Ingredients: 2 oranges, 1 kiwi , 1 cup of grapes, 1 cup strawberries, 1/4 tsp lime zest, 2 tbsps lime juice, 1 tbsp honey.
How to make it: Slice the oranges in halves to make the orange bowls. With a spoon scoop out the flesh of the orange. Peel and cut the other fruits and mix them in a large bowl together with the orange flesh. In a small bowl combine the lime zest, lime juice and honey, then add this mixture on the fruits. In the end, add the salad in the orange bowls and serve it to your friends. You will certainly impress everyone!
2. Chocolate “Salami” with Biscuits
Vegan Chocolate Salami with Biscuits
Ingredients: 500 gr. vegan biscuits, 200 gr. sugar, 100 gr. nuts (chopped), 2 vanilla sugar sachet, 50 gr. raisins, 3 tablespoons of cocoa, 200 gr. margarine (or homemade vegan butter)
How to make it:
In a large bowl, crumble the biscuits, add the margarine, cocoa, sugar, vanilla, raisins and the nuts, then mix all these ingredients.
Separately, heat the sugar to caramelize it and add 150 ml of water. Boil until the sugar dissolves completely, then let this syrup cool. After that, mix it with the other ingredients. Use a cellophane wrap (you can put some coconut flakes on it) to roll the paste obtained giving it the circular shape of a salami, then let it in the fridge for 2-3 hours.
3. Vegan Chocolate Cake with Fruits
Ingredients: 200 gr. flour, 80 gr. cocoa, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 tablespoon lemon juice, 1 cup grapes (and any other fruits you like)
How to make it:
Preheat the oven to 180° C. Mix the flour, cocoa, baking powder, sugar and salt in a large bowl. In another bowl mix soy milk, water, oil and rum. Pour over the dry ingredients and mix them well. Add the lemon juice and stir. Pour the mixture into a pan and bake for 35 ~ 40 minutes. Powder the cake with sugar and vanilla and decorate it with grapes or other delicious fruits you prefer.
4. Vegan Homemade Chocolate
Ingredients: 2 drops of rum extract, 4 tablespoons cocoa powder, 500 gr coconut milk powder, 200 gr margarine, 200 ml water, 500 gr sugar
How to make it:
Heat the sugar in a pot with water until melted. After ten minutes of boiling, add the margarine and mix. Take the pan from the heat and add the coconut powdered milk, the cocoa and 2 drops of rum extract. Mix with the mixer until you obtain a paste. Put the mixture in a special chocolate tray and let it in the fridge for 3 hours.
Vegan Desserts Tips and Tricks:
- You can make all kind of desserts without eggs or dairy just by using substitutes like soy milk or tofu cheese.
- Pancakes should not necessarily contain eggs. And if you can replace the milk with a soy beverage, you will obtain some yummilicious pancakes.
- Crazy about cheesecakes? Try to replace the cheese with tofu cream.
- Honey is a great ingredient for simple delicious vegan desserts. Try eating it with bread or with simple biscuits. This will remind you of childhood.
- At last, but not least, don’t forget the peanut butter! Use it in your special vegan desserts with confidence!
